Yum yum yum...delicioso!

So yep, again...it's been a while. Went through an emotionally rough patch over the last couple of months, three myself into working almost 70 hours a week between my two jobs and ate like crap. Time to get back into the swing of things.

I have been using my Wii for the past week and doing the Biggest Loser Challenge game. It is too cold to go outside and venture to the gym. So I will stay inside and get a more interesting workout done. Once it is not so cold I think I am only going to use the gym as a place to do weight lifting, and keep my cardio at home.

My first weigh-in on the game was today and in the last week it says that I have dropped 1.35% of my body weight so far. I am alright with that. Now the challenge is to keep going, stay motivated, and try to avoid emotional drama at all costs!!

In keeping with the getting healthier challenge, I have been focusing on changing up my diet. I have been having pomegranates for breakfast because they are amazing. Last night for dinner I made a pomegranate-orange turkey breast with a mashed sweet potato for a side. It was very good. Tonight I am making sweet potato gnocchi with butternut squash and broccoli as a side. For breakfast this morning I thought I would try something new and it came out really well:

So first I took a red bell pepper, cut it in half, removed the stem and the seeds:


Then I preheated the oven to 400 degrees. Once it was ready I stuck the peppers in on a piece of tinfoil on top of a cookie sheet and roasted them for 20 minutes.


After they were sufficiently roasted I took Egg Beaters Southwest Style and poured it into the peppers. I put them right up against the side of the baking pan that I was using and rolled up the tinfoil to support both sides of the pepper so that it made a bowl and didn't collapse. That went into the oven for another 20 minutes at 350.


Once the egg was cooked all the way through (times may vary depending on your oven) I took it out and put a little shredded Mexican cheese on top.



I put them back into the oven for just a few minutes until the cheese was melted and then voila! A delicious breakfast that consists of 140 calories, not a lot of fat, and tastes pretty darn good!! Sprinkle some pepper on top or add salsa and you are good to go.
